8 ounces dried fettuccine pasta
2 boneless, skinless chicken breasts (about 1 pound total)
1 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
2 tablespoons canola oil
8 tablespoons (1 stick) European-style unsalted butter, divided
2 cloves garlic, minced
1 cup heavy cream
1 cup finely grated Parmesan cheese (2 1/2 ounces), plus more for serving
1/4 teaspoon freshly grated nutmeg
Coarsely chopped fresh parsley leaves, for serving
Instructions
Cook the Pasta
Boil fettuccine in salted water until al dente. Drain and set aside.Prepare the Chicken
Season chicken breasts with salt and pepper. In a skillet over medium-high heat, heat canola oil. Cook chicken until golden brown and cooked through, about 6–8 minutes. Remove and set aside.Make the Alfredo Sauce
In the same skillet, reduce heat to medium. Melt 4 tablespoons of butter, add minced garlic, and sauté for 30 seconds. Pour in heavy cream, stirring continuously, and simmer for 2–3 minutes.Incorporate Cheese and Seasonings
Gradually whisk in grated Parmesan cheese until smooth. Add remaining salt, pepper, and nutmeg. Stir to combine.Combine Pasta and Chicken
Return cooked chicken to the skillet, add drained fettuccine, and toss to coat with the Alfredo sauce.Finish with Butter
Add remaining 4 tablespoons of butter, stirring until melted and the sauce is silky.Serve
